how to the musicians know what songs they will be playing on blues jam nights?

At a blues jam night in bars, i notice guitar players ans such will just go up on stage and simply start playing songs, they confer very slightly and then go straight into it. Do these guys all just know a load of songs, or what?

Most blues songs all have the same chord progression (12-bar blues progression) so all they have to do is decide on which key to play it in. Then it’s just a matter of playing licks that fit the chord progression.
